Easy Vegan & Sugar Free Banana Bread

Last week I had a random craving for banana bread and then I quickly realised that I was doing the whole sugar free thing. So no banana bread for me. Apparently. BUT with the help of google I found a recipe that was vegan, sugar free, could be gluten free if I had the right flours on hand and only contained 5 ingredients?? No egg replacer? No milk? I was dubious. But I'll tell you right now IT WAS SO GOOD! So of course, I have to share the recipe. 


Big thanks to google for delivering this one to me, originally from this blog A Brit in Helskini. This recipe is AMAZING! How does a cake work without the ingredient's you would usually think of when the word cake is said? After I had mixed everything else I realised I didn't actually have any baking powder. But no worries, I just used some AVC and more baking soda in it's place. I topped it with raspberries, boysenberries and some cacao nibs. AND IT WAS DEVINE. We ate it over the course of the next few days. I'll be honest and say it didn't last the long weekend. Not even close. 


preheat oven to 190c

Mix the mashed bananas and oil together. Fold through the flours, baking powder & soda. 

Pour into lined tin and bake for 30-40 minutes, until golden / skewer comes out clean


3 ripe bananas, mashed

1/2c oil

11/2c flour (gluten free if needed)

1tsp baking powder

1tsp baking soda
