Summer is definitely over here in New Zealand. Despite the mornings being frosty and extra blankets on the bed at night, the sun is lingering around but it is its last goodbyes. To send Summer off with a bang I decided to make Pudding Pops! Vegan popsicles. Cookies and Cream flavour. Need I say more? If you needed further convincing I was incredibly delighted when Luke and my step-daughters asked for seconds of these!! I am sure I will be making more of them, in different flavours in the future!

1 can coconut milk
1/2c Maple syrup
Combine the coconut milk and maple syrup in a blender.
Add the brownies and pulse a few times
add some big chunks too!
Pour into mould, add sticks & freeze.
1c Almond milk
1c Maple Syrup
11/2 tspn vanilla
2c Cocoa powder
4c Cashew Flour
In a food processor combine the milk, syrup and vanilla. Process. Add cocoa powder and combine again.
In a mixing bowl fold in the cashew flour.
Spread the batter on to a parchment lined pan and dehydrate overnight or bake in the oven for an hour. Flip them over and dehydrate for five more hours or bake for another hour.
